Peanut Sauce Shrimp Soba Noodles

Brown rice is a good choice for dinner, but it can become a bit boring. How do I change things up? I’ll cook a stir-fry using soba noodles. Buckwheat is the main ingredient of these thin, tender Japanese noodles. Just FYI, this whole-grain is not only the star ingredient in these quick-cooking noodles, but also makes a great alternative to white flour pancakes. Today, I am sharing my Shrimp Soba noodles in Peanut Sauce. This new addition will be a hit with your family!

Ingredients
Soba noodles with carrots, onions, yellow peppers, green peas and shrimp.
For peanut sauce: Ginger, garlic, peanut oil, soy sauce and sesame seed oil.
How to make Shrimp Soba noodles in Peanut Sauce
Follow the instructions on your package to cook your soba noodle. Drain and set aside when done.

While the noodles cook, thinly cut your carrot, onion, and yellow pepper. Use a peeler to get thin carrot strips!

In a wok over medium heat, heat some oil and sauté your vegetables with some pepper and salt for 7 minutes. Then, cook the shrimp in the wok.

Make your peanut sauce while your vegetables and shrimp cook. Put the peanut butter and ginger into a medium-sized bowl.

You can also add a little sriracha if you don’t like spicy food.

Mix all ingredients together and then set aside.

Add your shrimp to the sauteed vegetables on your stove.

Pour your peanut sauce on top.

Add your soba noodles to the pot.

Add your green peas to the sauce and cook for a couple more minutes, until they are bright green.

Enjoy your Shrimp Soba noodles in Peanut Sauce topped with chopped parsley or fresh chives and chopped peanuts!
