Slow Cooker Split Pea and Bacon Soup

Everyone knows that we should be eating whole grains, lean protein, leafy vegetables, etc. What’s holding us back? Here’s an easy and quick soup that you can try, whether or not time is the issue or you lack ideas! Slow Cooker Cut Up Pea and Bacon Soup is ready in minutes. You can walk away and do other work while it cooks! Want to save even more time? Double the batch to save for weekday lunches. Or, pop it in the freezer and use for another day.

Components
Bacon If you want to reduce sodium and fats in the soup, use turkey bacon. Both bacons add a salty and savoury flavor to it.
Onion Using a white or yellow onion adds a delicate flavor to the soup, as well as vitamin C.

Celery While it does not add much in the way of taste, celery still maintains some crunch and is packed with vitamins and nutrition.
Carrots – Although carrots have a sweet taste, they are incredibly high in vitamins A and K.

Prepare dinner quickly with these dried and hulled beans. They are rich in antioxidants, vitamins and zinc.
Thyme : Adds a lemony earthy flavor to the soup.
Bay Leaves: Even if you don’t eat the leaves, they can be soaked into a soup to add a mild, almost minty flavor and aroma.
Hen stock: Adds flavor to the broth.

Does the break-up peas need to be soaked before cooking?
It is not necessary to soak the peas before cooking them. This is especially true when using a slow cooker.

Can you freeze pea soup that has been broken up?
Sure! This soup is great for meal preparation. Place it in a freezer-safe resealable pouch and keep for up to 3 months.
